Terre del Bruno wines, how to pair them with food - Gorgoli

Gorgoli red wine - Super Tuscan

Gorgoli TOSCANA IGT

This Super Tuscan wine takes its name from the vineyard where its grapes are coultivated and it is a blend of Sangiovese and Cabernet Sauvignon. The mixture of the main vine of the Chianti area and the international vine grown locally gives it robustness and personality. The grapes from this vineyard are selected during the green harvest, between June and July. In this phase the excess bunches are eliminated, thus arriving at the end of September with three bunches per plant. Thanks to this selection, the grapes that actually ripen will have a greater structure and body, suitable for aging in wood, due to the higher sugar index present in each grape.
The two varieties of grapes are aged separately for eighteen months. To enhace the quality of each variety, French oak of first passage has been used for the Sangiovese and American oak of first passage has been used for the Cabernet Sauvignon. During this period the wine is tested once every two months, both on the organoleptic level and with lab tests.
After another ten months minimum of bottle aging, the wine, now ready to be drank, gives opening aromas of red fruit, cherries and hedgerow berries with hints of vanilla, coffee and cream. Warm with elegant flavors, slightly tannic. Structured wine with an intense and deep red color.

Paring this wine with food:

Terre del Bruno Gorgoli IGT is to be stored orizontally and served at a temperature of 18-20°C. This Super Tuscan wine with its aromas and texture goes really well with a wide variety of food. The traditional pairings are with Tuscan pecorino cheeses, grilled and roasted meat, fried eggs covered with truffle flakes and truffle risotto, lasagna and many other pasta dishes. For surprising matches, we suggest to pair the Gorgoli with dark chocolate based preparation, such as the Devil’s Cake. You will not regret having tried it.
