Vinification

After the harvest, carried out by hand by placing the bunches in baskets, the Cabernet Sauvignon grapes are destemmed. The maceration, lasting about 8-10 days in stainless steel tanks at a controlled temperature, allows the wine to complete the alcoholic fermentation at temperatures not exceeding 29°C. During this period, pumping over takes place four times a day. The wine is then decanted and completes the malolactic fermentation by the end of December. The refinement takes place in ICÔNE French oak barriques, created specifically for this specific blend.

Tasting notes

Complex on the nose, with aromas of red fruit and peppery notes. In the mouth it is warm and full-bodied, with an enveloping tannic component balanced by a good acidity. The aging in wood enriches the wine with balsamic and spicy notes that come together and complete with a sweet final note of vanilla.
